lite potatoes au gratin

Ingredients
•3 lbs large Yukon Gold or russet potatoes, about 6
•6 large garlic cloves, unpeeled
•1 1/2 cups low fat cottage cheese
•1/2 cup reduced fat sour cream
•1 1/2 tsp salt
•1/4 tsp pepper
•1 bunch scallions, sliced
•1/2 cup grated extra sharp Cheddar cheese
•1/4 tsp paprika
Steps
1.Oven 350F
2. Scrubbed potatoes, do not peel. Cover potatoes and garlic with cold
water and bring to simmer over med heat. Reduce heat to low and cook until
potatoes are barely tender, 15 to 20 minutes. Drain and let set until cool
enough to handle. Peel and grate into large bowl; set aside.
3. Squeeze garlic cloves into processor. Add cottage cheese and process
until completely smooth. Add sour cream, salt, pepper and process briefly
to combine. Add cottage cheese mixture and scallions to pottoes and mix
well. Turn into baking dish and sprinkle with Cheddar and paprika.
4. Bake 30 to 40 minutes, or until golden.

eating well.. thought it tasted as good as its richer versions.
