baked potatoes aioli

Ingredients
  • 6 medium baking potatoes (3 lbs)
  • 1/4 stick butter, melted
  • AIOLI SAUCE
  • 2 medium garlic cloves
  • 1 egg
  • 2 large egg yolks
  • 1 tsp Dijon mustard
  • 1 tablespoon tarragon vinegar
  • 1/2 tsp salt
  • pepper
  • 3/4 cup olive oil
  • 1 dash hot pepper sauce
  • 2 tablespoons minced herbs: tarragon, parsley, chives, basil
Steps
  1. 1. POTATOES: Brush with melted butter. Bake 400F until tender, about 1 hr 15 min. When done, cut slit lengthwise and mash potato in its skin. Top each potato with 1 T aioli and sprinkle with minced herbs. Pass rest of sauce
  2. 2. AIOLI: Processor, drop in garlic and mince. add egg, egg yolks, mustard, vinegar, salt and pepper; process until smooth.
  3. 3. Motor running, add 1/4 of oil through feed tube in drops. Pour rest in slow stream, pouring faster as incorporated. Add hot pepper sauce, salt and pepper.

good with grilled meat or fish
