chicken breasts stuffed with sun dried tomatoes feta

Chicken
Ingredients
  • 1 Tablespoon olive oil
  • 1/2 cup finely chopped red onion
  • 1 1/2 tsp minced garlic
  • 1/2 cup pitted kalamata olives, cut into thin strips
  • 1/4 cup pine nuts, toasted lightly
  • 1/2 cup drained, oil packed sun dried tomatoes
  • rinse, patted dry, cut into thin strips
  • 1/4 lb Feta cheese, crumbled (1 cup)
  • 2 Tablespoons grated Parmesan cheese
  • 1 Tablespoon fresh marjoram or 1 tsp dried
  • salt and pepper to taste
  • 2 whole boneless chicken breast with skin, halved
  • 1 Tablespoon olive oil
Steps
  1. 1.Oven 350F
  2. 2. In large ovenproof skillet cook onion in oil over moderate heat until softened. add garlic and cook 1 minute. Transfer to bowl and let cool. Stir in rest of stuffing ingredients and season to taste with salt and pepper.
  3. 3. Cut a lenthwise pocket in thicker end of chicken breast half. Make it as wide as possible with out puncturing sides (like stuffing a pillow). Fill each breast half with 1/4 of the dressing.
  4. 4. Heat 1 T oil over moderately high heat until hot but not smoking and brown chicken skin side down. leaving skin sides down, transfer skillet to oven and bake until cooked through, about 12 minutes.
