hoisin chicken stir fry

Ingredients
  • 3 tablespoons canola oil
  • 1 medium onion, halved, sliced
  • 1 red bell pepper, thinly sliced
  • 1 Tablespoon minced gingerroot
  • 1 garlic clove, minced
  • 1 lb boneless, skinless chicken breast, cut into 3/4" chunks
  • salt and pepper
  • 6 oz snowpeas, trimmed
  • 2 carrots, thinly sliced
  • (can sub broccoli florets, mushrooms etc)
  • crushed red chile flakes, rather generous amt
  • 1/3 cup Hoisin sauce
  • 2 Tablespoons water
  • 1/3 cup dry roasted peanuts or cashews
Steps
  1. 1. Stir fry onion until softened add red bell pepper and stir fry briefly until vegetables are browned around edges, adding garlic and gingerroot. Remove to plate.
  2. 2. Sprinkle chicken with salt and pepper and stir fry until all sides brown. stir in snow peas and carrots and sprinkle in some red pepper flakes.
  3. 3. Reduce heat to med low and add onion-pepper mixture, hoisin sauce, . simmer 1 minute to wilt snow peas and finish cooking chicken and carrots. sprinkle with nuts nd serve over rice, prefer Jasamine rice
