apple pear grape cheddar salad with pecans

Ingredients
  • 1 cup apple juice
  • 2 Tablespoons cider vinegar
  • 1 tsp olive oil
  • 1/2 tsp salt
  • pepper
  • 10 cups gourmet salad greens, about 10 ozs
  • 1 cup seedless red grapes, halved
  • 1 medium McIntosh apple, cut into 18 wedges
  • 1 medium Bartlett pears, cut into 18 wedges
  • 1/4 cup finely shredded sharp cheddar cheese
  • 3 Tablespoons chopped pecans, toasted
Steps
  1. 1. Bring apple juice to boil over med high heat. Cook until reduced to about 3 Tablespoons, about 10 minutes.
  2. 2. Combine greens and fruit. drizzle with dressing and toss gently to coat. Sprinkle with cheese and nuts
