butter lettuce salad with merlot raspberry dressing

Ingredients
  • DRESSING:
  • 1 large clov garlic, minced
  • 1 shallot, minced
  • 1 tsp Dijon mustard
  • 1 Tablespoon honey
  • 2 Tablespoons raspberry vinegar
  • 1/2 cup Merlot wine
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 Tablespoons olive oil
  • 3 Tablespoons vegetable oil
  • 1 cup raspberries
  • 3 Tablespoons low-fat sour cream
  • SALAD
  • 1 large head butter lettuce
  • 1 Tablespoon to 2 T chopped fresh chives
  • 2 Tablespoons chopped parsley
  • 1/2 cup fresh raspberries
  • 1/2 cup toasted pecans
Steps
  1. 1.DRESSING: Combine all ingredients in processor and mix until smooth. SALAD: Tear lettuce into large pieces. Add chopped herbs and about 1/2 of the dressing. Toss gently to coat; adding more if necessary. Garnish with raspberries and pecans
