apricot orange crumb cake

Ingredients
•1 1/4 cups flour
•1/2 cup sugar
•1/8 tsp salt,
•1/4 cup chilled butter or margerine, cut into smll pieces
•3 Tablespoons tub style light cream cheese
•1/2 tsp baking power
•1/4 tsp baking soda
•1/3 cup 1% low fAT MILK
•3 tablespoons part-skim ricotta cheese
•1 tsp vanilla
•1 tsp grated orange rind
•1 large egg
•1/4 cup chopped dried apricots
• Cooking spray
•1/4 cup apricot preserves
Steps
1. Preheat oven to 350F
2. Combine flour, sugar, and salt in mixing bowl, cut in butter and cream
cheese with pastry blender, until it resembles coarse meal. Reserve 1/2
cup flour mixture for tipping; set aside.
3. Combine remaininf flour mixture, baking powder, baking soda, and add
milk, ricotta, vanilla, orange rind, and egg. Beat at medium speed until
blended(batter would be lumpy) , and fold in chopped apricots. Spoon into
8 inch round cakr pan coated with cooking spray. Dot with apricot
preserves, and swirl through batter with knife. Sprinkle over the reserved
1/2 cup flour mixture.
4. Bake 350F for 30 minutes or until cake springs back, in fright, when
