Ingredients
  • 3 1/2 cups flour
  • 1 Tablespoon ginger
  • 1 Tablespoon baking powder
  • 1 tsp salt
  • 3/4 cup finely chopped crytallized ginger, about 4 ozs
  • 2 tsp grated lemon peel
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 Tablespoon vanilla
  • 1/2 cup whipping cream
  • 2 Tablespoons butter, melted, cooled
  • TOPPING
  • 1 1/2 cups sugar, mix to blend
  • 2 tsp ground ginger
  • 3 cups vegetable oil, for frying
  • 3 cups solid vegetable shortening, for frying
Steps
  1. 1. Whisk first 4 ingredinents to blend. Stir in crystallized ginger and lemon peel.
  2. 2. Whisk togethersugar, eggs and vanilla to blend well. stir in cream and melted butter.
  3. 3. Add flour mixture; blend well; dough will besticky. Cover with plastic wrap and chill at least 1 hour( cvan refrigerate 1 day ahead)
  4. 4. Line baking sheet with plastic wrap. Roll out dough on floured surface to 3/4 inch. Using floured 2 1/4 inch cookie cutter cut out rounds. using 1 1/4 inch floured cutter cut out holes. Gather scraps and re roll.. Place doughnuts on baking sheet..
  5. 5. Heat oil mixture to 350F. Adjust heatas necessary to maintain temperature. Should take about 2 minutes on each side to cook. Transfer to paper towels to drain and cool slightly.While warm coat with sugar mixture(1 day ahead. cool completely. wrap inplastic wrap and store at room temp)
