muffins date bran

Ingredients
  • 1 egg
  • 1/4 cup safflower oil
  • 1 1/3 cups milk
  • 1 1/3 cups high fiber bran cereal (Kellog's All Bran)
  • 1 cup chopped dates
  • 1/3 cup currants
  • 1 1/2 cups flour
  • 1 Tablespoon baking powder
  • 1/3 cup sugar
Steps
  1. 1.Oven 400F. grease 12 muffin cups, 2 1/2 inches in diameter.
  2. 2. Whisk together egg, oil and milk. Stir in bran and set aside to soften, about 20 minutes.
  3. 3. Combine dates and cureants
  4. 4. Mix together flour, baking powder and sugar. Pour bran mixture over flour and fold lightly, 3 or 4 times with spatula, to partially combine.
  5. 5. Sprinkle date mixture over batter and distribute evenly using as few strokes as possible(batter shuld not be perfectly smooth)
  6. 6. Bake in middle of oven until lightly browned and tops spring back when lightly pressed, about 20 mnutes. Cool muffins on rack for 15 to 20 minutes.
