muffins rhubarb walnut

Ingredients
  • 1/2 cup + 2 T brown sugar
  • 3 tablespoons melted butter
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup diced rhubarb
  • 1/2 cup chopped walnuts
  • 1 1/4 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Topping:
  • 1 tablespoon melted butter
  • 1/4 cup sugar
  • 3/4 tsp cinnamon
Steps
  1. 1.Oven 400F
  2. 2.Combine brown sugar, melted butter, egg and vanilla; beat to blend. Stir in rhubarb and walnuts.
  3. 3. Combine flour, soda, baking powder, and salt; stir into rhubarb mixture until just moistened. Fill greased muffin cups 2/3 full.
  4. 4. Combine topping ingredients and sprinkle over muffins pressing lightly into batter. Bake about 20 minutes, or until muffins spring back when touched lightly. Makes 10 to 12 muffins.
