muffins rhubarb walnut

Ingredients
•1/2 cup + 2 T brown sugar
•3 tablespoons melted butter
•1 egg
•1 tsp vanilla
•3/4 cup diced rhubarb
•1/2 cup chopped walnuts
•1 1/4 cups flour
•1/2 tsp baking soda
•1/2 tsp baking powder
•1/4 tsp salt
• Topping:
•1 tablespoon melted butter
•1/4 cup sugar
•3/4 tsp cinnamon
Steps
1.Oven 400F
2.Combine brown sugar, melted butter, egg and vanilla; beat to blend. Stir
in rhubarb and walnuts.
3. Combine flour, soda, baking powder, and salt; stir into rhubarb
mixture until just moistened. Fill greased muffin cups 2/3 full.
4. Combine topping ingredients and sprinkle over muffins pressing lightly
into batter. Bake about 20 minutes, or until muffins spring back when
touched lightly. Makes 10 to 12 muffins.
