black bean roasted corn mango salad

Ingredients
  • 2 tsp canola oil
  • 1 clove garlic, minced
  • 1 1/2 cups fresh corn kernels, 2 to 3 ears
  • 1 large ripe mango, peel , dice
  • 1 15 1/2 oz ca black beans, rinsed
  • 1/2 cup chopped red onion
  • 1/2 cup diced red bell pepper
  • 3 Tablespoons lime juice
  • 1 small canned chiotle chile in adobo sauce, drain, chop
  • 1 1/2 Tablespoons chopped cilantro (used coriander)
  • 1/4 tsp ground cumin
  • 1/4 tsp salt
Steps
  1. 1. Heat oil in skillet over med high. Add garlic cook 30 sec. Stir in corn and coo until browned about 8 minutes. Transfer to large bowl. Stir in rest of ingredients
Notes
