japanese noodle salad

Ingredients
  • 1 8 1/2 oz pkg soba noodles (buckwheat) or spaghetti, cool, drain Cover and chill until ready to serve
  • 1 cup pea pods or green beans, halved lengthwise
  • 2 medium carrots, cut into thin strips (1 cup)
  • 10 cups mixed greens or 1 med head lettuce, torn
  • TOASTED SESAME VINAIGRETTE 1/3 CUP, combine in jar/ lid 1/4 cup rice vinegar or white wine vinegar
  • 2 tablespoons salad oil
  • 2 tsp toasted sesame seeds
  • 1 tsp honey
  • 1 tsp tamari soy sauce or soy sauce
  • 1/2 tsp toasted sesame oil
  • 1 dash ground red pepper
  • SPICY TAHINI-GINGER DRESSING, 1 cup, combine in blender 1/3 cup tahini (sesame seed paste)
  • 1/3 cup water
  • 3 tablespoons rice vinegar
  • 3 tablespoons tamari or soy sauce
  • 2 tablespoons thinly sliced gingeroot
  • 2 garlic cloves, (2 to 3)
  • 1 tablespoon honey
  • 1/2 tsp to 1 tsp chili paste or chili sauce
  • blend until smooth; strain through sieve
  • REST OF SALAD
  • 1 medium thinly sliced cucumber
  • 2 medium tomatoes, cut in wedges
  • 2/3 cup bias cut green onions
Steps
  1. 1. Cook green beans, if using, and carrots in small amount of boiling water, covered, for 2 to 3 minutes until crisp tender (add pea pods the last 30 seconds, if using) Drain, cover and chill until ready to serve.
  2. 2. Cook noodles and chill unil ready to serve. Make Vinaigrett and Dressing. ASSEMBLE:
  3. 3. Toss greens with Toasted Sesame Vinaigrette .
  4. 4. Toss noodles with Spicy-Ginger Dressing. ARRANGE Greens on plates. Top with noodles, cucumber, tomatos, pea pods, carrots. top with green onions.
Notes

Easily made ahead. Like this noodle salad very much. Used skippy peanut butter instead of sesame paste and whirled it in processor to mix. withgrouper marinated in orange-butter soy and grilled. Served it with lacquered salmon was great combination( to Black's JOANS RECIPES copy and Mike and Sandy). Was perfect with Hogue Cellars Gewrztraminer, see wine for further suggestions. cafe brenda Note: made with soba and tahini paste and did not like. pasta and peanut butter much better
