jessies caramel popcorn balls

Ingredients
  • 40 cups popped popcorn (2 cups kernels)
  • 1/2 cup butter
  • 1/2 cup honey
  • 1 cup packed light brown sugar
  • 1 14 oz can sweetened condensed milk
  • 5 oz marshmallows(about 20 large)
  • 10 ozs semisweet choclate, melted
Steps
  1. 1. Set popped popcorn aside in a bowl. Coat to baking sheets with cooking spray.
  2. 2. Combine butter, honey and brown sugar in 4 qt sauce pan over med heat; cook stirring wit wooden spoom. When mixture begins to boil, stop stirring and cook until dark amber around sides of pan, for about 4 minutes.
  3. 3. Remove pan from heat . Stir in milk. Add marshmallows and stir until melted.
  4. 4. pour caramel over popcorn and mix with wooden spoon to coat.
  5. 5. When cool enough tohandle, about 3 minutes, spray hands with cooking spray and shape corn inyo 3 inch balls. Place on baking sheet to cool for about 15 min
  6. 6. Melt chocolate (do not use chocolate chips don't melt well) With spoon or tines of fork drizzle over popcorn balls
  7. 7. when chocolate has cooledstor in plastic container. Can make 2 to 3 days in advance.
