Ingredients
  • HERB SPICED makes 2 cups oven 350F
  • 2 cups assorted nuts(walnuts, pecans, hazelnuts,
  • and natural almonds with skins)
  • Whisk Together
  • 2 tablespoons vegetable oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 t cayenne
  • SPICED PEANUTS makes 2 1/2 cups, oven 300F
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons sugar
  • 1 teaspoon curry powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne
  • 2 1/2 cups dry roasted peanuts
  • CANDIED CURRIED PECANS
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp garlic powder
  • 1 1/4 tsp Kosher salt
  • 3/4 tsp curry powder
  • 1/4 tsp cayenne
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons honey
  • 3 cups pecan halves
Steps
  1. 1.HERB SPICED: Add nuts to flavoring mixture. Spread in pan and roast in middle of oven 10 minutes (may be made 3 dys ahead and kept in airtight container. SPICED PEANUTS: Hat oil in skillet over medium heat. Add seasonings and stir until fragrant, about 30 seconds. Add peanuts and stir until coated, about 2 minutes. Transfer to large rimmed baking sheet. Bake until golden brown and almost dry, stirring occasionally, about 15 minutes. Season with salt. Transfer to paper towels; drain. Cool. Can make 3 days ahead. Store in airtight container at room temperature CANDIED CURRIED PECANS Oven 250F line rimmed baking sheet with foil. Mix seasonings to blend. Meltbutter and honey with 1/4 tsp salt over med heat.. add pecans and stir to coat; remove from heat and toss with spice mixture. spread in single layer and bake until dry and toasted, about 40 minutes.. cool completely Separate ecans. Can make a week ahead.
