muffins blueberrycornmeal

Ingredients
  • 1 1/2 cups sifted flour
  • 1/2 cup yellow cornmeal
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 3 eggs
  • 4 tablespoons butter, melted
  • 1 1/2 cups blueberries
Steps
  1. 1.Oven 425F
  2. 2. Sift dry ingredients into medium bowl. Whisk together buttermilk, eggs, and melted butter until smooth. make a well in dry ingredients and pour in buttermilk mixture. Stir to combine, in 15 to 20 strokes, streaks of flour may remain. add berries and stir quickly until just blended but still lumpy.
  3. 3. Fill muffin cups 1/2 full. Place in middle of oven and reduce heat to 400F. Bake 20 to 25 minutes, until; light golden. Cool in pan on rack, 1 to 2 minutes.
