chocolate chunk cookies with fruit nuts

Ingredients
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 9 ozs bittersweet or semisweet chocolate, chop in 1/2" pieces
  • 3/4 cup quartered dried apricots (about 4 1/2 ozs)
  • 1 cup dried tart cherries (about 5 ozs)
  • 1 cup coarsely chopped pecans (about 4 oz)
Steps
  1. 1.Oven 375F. ungreased baking sheet
  2. 2. Whisk flour , baking soda, baking powder and salt together and set aside.
  3. 3. In another bowl, with electric mixer, beat together butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. 4. Beat in flour mixture until just combined. stir in chocolate, fruit and nuts.
  5. 5. Drop dough by heaping tablespoonsful, about 2 inches apart. Bake in upper and lower thirds of oven, switching positions half way through baking, about 12 minutes total baking time. or until golden. Cool on baking sheet on racks 5 minutes and transfer to racks to cool. NOTE: I used 3 Toberlone candy bars-2 milk chocolate and 1 white chocolate; 1 pkg dried cherries (probbly could add more) added dash of vanilla to dough. good cookie.

Picnic on pond: rose brut champagne, honey dew lime ade; roast beef-basil-tomatochutney lavash sandwiches; smoked salmon-cucumber lavash sandwiches; corn-tomato sald with roasted poblano; cheese , crackers, fruit, cookies.
