trail mix or farmers cookies

Ingredients
  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 1/2 Tablespoons grated lemon rind (about 3 lemons)
  • 1/4 cup lemon juice
  • 1 1/2 cups flour
  • 1 1/2 tsp double acting baking powder
  • 1/2 tsp baking soda
  • salt
  • 1/4 cup powdered sugar for sifting over cookies
Steps
  1. 1. Cream together butter and sugar, add vanilla, rind and lemon juice, beating, and beat the mixture until it is smooth.
  2. 2. Sift flour. baking powder, baking soda and salt into the bowl and blend dough well.
  3. 3.Onto a piece of waxed paper form the dough into a log 1 1/2 inch in diameter. Chill wrapped in waxed paper and foil for 2 hours (or freeze up to 3 moinths)
  4. 4. cut log into 1/8 inch slices and bake cookies 2 inches apart on ungreased baking sheets at 350 F for 8 to 10 minutes. or until edges are just golden. Cool on rack sift over powdered sugar
