lace walnut wafers

Ingredients
  • 1 1/2 cups walnuts (5-oz)
  • 1 Tablespoon plus 2 tsp flour
  • 1 pinch salt
  • 1 cup light brown sugar
  • 1 large egg
  • 3 Tablespoons very soft butter
  • 1 Tablespoon vanilla
Steps
  1. 1. Line a cookie sheet with foil, shiny side up. Bake cookies at 350F on middle rack, until brown and centers cooked through, about 7 to 9 minutes. Remove pan from oven and cool on foil. Peel off foil.
  2. 2. Process walnuts, flour and salt; pulse about 15 times until nuts are coarsely chopped and transfer mixture to small bowl.
  3. 3. Put sugar, eggs in processor and process 1 minute. Add butter and vanilla and process 1 minute.Add the walnut mixture and mix with 2 pulses.
  4. 4. Put a scant teaspoon of batter on foil lined pan. Smooth with back of spoon into 2 inch rounds.
Notes

I like to serve these with strawberries in raspberry sauce. for best results use nonstick baking mat and a heavy duty rigid baking sheet.
